Okay, here’s the secret to good living: it’s largely about food (and associated beverages). If you haven’t seen it yet, watch Michael Pollan’s 4 part series on Netflix called ‘Cooked’. It really sums up the human relationship to food – cooked food – and how important it is, or should be, in our daily lives.
So today we’re sharing one of our favorite recipes from the Weber BBQ repertoire. It’s typically an accompaniment to bbq’d steak or chicken but can be served with anything and is absolutely delicious: avocado and grilled corn salsa.
Here’s the ingredients list:
2 ears fresh corn, husked
Extra-virgin olive oil
1 large garlic clove
1 Hass avocado, roughly chopped
6 scallions (white and light green parts only), finely chopped
¼ cup finely chopped fresh basil leaves
3 tablespoons fresh lime juice
¼ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
So just drizzle the corn in oil and grill on the bbq until done (10 mins). Let cool and cut kernels from the cob. Add to a bowl with all the other ingredients and mix. Super easy and incredibly tasty – you can actually taste all the diverse flavors. Give this one a try – you’ll thank us.
